Cane, not molasses. That’s where Chalong Bay rum begins.

A Tulleeho offsite took us down a quiet Chalong road, past a ‘No Entrance Without Guide’ sign, into one of the few craft distilleries in Southeast Asia making rum from 100% pure, first-press Thai sugarcane juice. No molasses anywhere. The same distinction that sets Cachaça and agricole apart from the rest of the rum world.

Chalong Bay was started in 2012 by a young French couple, Thibault Spithakis and Marine Lucchini. They left financial services in Paris chasing one dream: a rum distillery on a tropical island. ‘Chalong’ means celebration in Thai. 

A single indigenous Thai cane variety, grown without chemicals, hand-cut without burning, pressed within hours of harvest. Distilled in a copper Armagnac still imported from France, heated over direct wood fire. Rare, even for craft. Then rested in steel for 8 to 12 months and was brought down slowly to 40%.

Here’s the twist. The bottle reads ‘The Spirit of Phuket, distilled from 100% pure sugarcane.’ Not a mention of rum. Thai law licenses Chalong Bay to make white spirits, not rum. So the word stays off the label, even when everyone in the room knows exactly what’s in the glass.

We tasted the range. Lemongrass, kaffir lime, lime, cinnamon, Thai sweet basil. Each one infused by vapour during distillation, pulled straight from the Thai kitchen.

Then the part everyone waited for. Shakers and jiggers down the table. A Chalong Bay Mojito. Devil’s Gold with kaffir lime, mango and chilli. Sunset Kiss with watermelon, passion fruit and cinnamon. Their in-house Waandee syrups are doing quiet work in the background.
