Tulleeho presents…SPEEDRAIL a monthly newsletter for the F&B professional and manager. Speedrail joins our existing e-mail newsletters, Alcobev - for the liquor industry professional and Salmagundi and Ask Tulleeho for the consumer.

New Delhi
Coming to our home city Delhi, not much happening this month.

Quite a few bars are under threat due to the Lal Dora and related land issues in Delhi, and Tulleeho would like to extend support to all of you under threat from it.

Female bartenders have been permitted by the High Court to serve liquor. We’re waiting for the Delhi Excise Act to also legitimize this so that we can have more women bartenders in Delhi.

Campari launched in Delhi with the Campari Red Passion Night @ the Intercontinental. Glendrummond, a Single Malt bottled in India also had their launch event with bagpipers, kilts and all also launched @ the Taj Palace.

Brewing for non-brewers: A Tiger Beer sponsored beer appreciation workshops (organized by Tulleeho) was also conducted last month in Delhi.

Visit of Dr Bill Lumsden, Master distiller, Glenmorangie. Team Tulleeho tasted the range of Glenmorangie as well as Ardbeg and interviewed Dr. Lumsden. A skeptic at the session asked Dr. Lumsden; how he could actually taste the things he claimed to taste in the Glenmorangie 10 year old. Tulleeho conducted a record 3 wine appreciation sessions in Delhi and 1 in Goa this month! Looks like wine is the next big thing.

We also interviewed Goncalo Rochado from Sogrape, the Portugese makers of Mateus Rose amongst other wines. Mateus Rose is often referred to as the Rolls Royce of rose. Read our interview with him Blog: Rolls Royce of rose.

Mumbai
New outlets...
11 echoes (lounge bar): continental cuisine, on Juhu beach next to Mocha cafe

Hard rock Cafe: Open. Close. Open. Close. Open?
The franchise has marked a spot in India, at Bombay dyeing Mills, Elphinstone. Has the trademark guitar overhead. It features a mammoth area, unlike anywhere in Mumbai. Opened sometime during December end and January start. It was one of the outlets shut down with a lot of others due to lack of requisite licenses. But it’s rescheduled to open sometime soon. If the regulars are to be believed it’s worth the hype.

Poison: Waterfield Road, Bandra. It’s two floors below Seijo and Souldish. The owners Gautam Singhania and Dj Aqueel would be disappointed as Poison was also shutdown due to the license issue. When open it belts out popular Hindi remixes and retro numbers. The booze is expensive but the owners often risk it and keep the outlet open till the wee hours of night.

Rio-Met Lounge: A Bohemian style lounge bar at Juhu Versova Link road. The bar has mood lighting and is adorned with beds on one corner.

Full 2/F2:It’s the new entertainment centre at 4 Bungalows, Andheri (West). Exists were the old Bowling company used to be. The bar is nice; good to visit during the day and follow up your beer with a game of pool or bowling at the upper level.

Barbeque Nation: Pali hill, Bandra (near club 9) Awesome food, you get to barbeque your kebabs and tikkas at the tables. Makes it fun to experience. More of a restaurant than a bar.

In profile this month is our Watering Hole of the Month, Salt Water Grill, Marine Drive. Arijit from Tulleeho met Chef Viraf Patel and Naveen Kotyankar, the Beverage Manager @ SWG as it is popularly referred to. Visit Blog: Salt Water Grill for the report and pictures. SWG for those of you from out of Mumbai is probably the destination of the moment in Mumbai and with good reason. Mumbai finally has an Al fresco place which takes advantage of the sea.

Hyderabad
Fever --next door to Touch...had a quiet launch some time back, Zafraan Exotica, road no 10, Banjara hills, fine dining lounge, outdoors 8th floor. Opened 2-3 months back, and Smirnoff and Tulleeho graced the place with a Smirnoff Tastemaker Session earlier this month. B&C celebrated its 3rd anniversary. Ahala..(The drama lounge) is quite a place, great ambience but not so great cocktails. OP Gaudiyal has left Touch and the bar industry, after a long stint and joined Dell in Hyderabad

Recipe for you...
A recipe devised by Shawn D’Souza (Bartender from Cidade de Goa) at a recent Smirnoff Train the Trainer workshop (the closest we could come to a bartenders convention) conducted by Tulleeho in Mumbai... and as an experienced taster I must assure you it’s quite a good one!

Smirnoff Citrus Twist: 45ml
Cashew Feni: 15 ml
Fresh orange dices: 4-5 no
Lemon wedges: 4-5 no
Grain sugar: 1 teaspoon
Lemonade: to top
Mint leaves: 4-5 no

Method: Muddle the lemons, oranges, mint leaves, sugar in a tall glass, and now add fresh limejuice, sugar syrup, Smirnoff and Feni to it.
Stir a bit and add crushed and cubed ice, top with Limca.
