According to the Larousse Gastronomique:
“An elaborate salad laid out on a large flat dish with each ingredient minced
(ground), shredded,
or sliced and arranged attractively in small rings of contrasting colour. Cold
meats, fish, cooked
vegetables, salads and pickles - anything can be used. The word is also used figuratively
to mean a
miscellaneous collection of things."
